Cajun Aces

Husband and wife duo Cody and Samantha Carroll first broke into the food business with Hot Tails in New Roads. Now, their second restaurant, Sac-a-Lait, has brought them to New Orleans' Warehouse District. "Cajun Aces" tackles the different Louisiana ingredients that they use to create new dishes for their restaurants. Such ingredients can include crawfish, mirlitons, pigs, figs, pecans, okra and other exciting delights. "`We'll tell the story of that ingredient, go harvest that ingredient, cook at the family farm, go to Hot Tails and do more casual versions of that dish, and finish at Sac-a-Lait," says Cody Carroll.
